                The deep-fried appetisers were a sign that we were in for something special. There were slender mushrooms, utterly crisp and magically infused with the flavour of shrimps and delicate prune and cuttlefish fritters, both showed a mastery of what Chinese chefs call 'huohou', the command of heat and timing.先上来的油炸开胃小菜就不一般啊不一般，预示着今儿这顿饭定是别有一番风采。这小份炸蘑菇，又酥又脆，还奇异的裹着些虾味儿；油炸馅饼，西梅干儿、墨鱼肉做馅儿，油而不腻。单这两样就显示了厨师做菜对火力大小及时间长短——也就是中国师傅说的“火候”——的精妙掌控能力。
