The Dutch government has invested more than $1 million in the research. Next week a team of Dutch scientists will release an insect cook book. Restaurants are already introducing some insect-infused dishes to their menus. Anna Holligan has been to check out what's on offer in one such establishment in the Dutch town of Hollum.
Here in the kitchen, the chefs are busy preparing today's specials.
"My name is Mark Forgennade. On the menu right now, there's a meat pie and some insect crumble. And in that crumble is some mealworms, some buffalo worms and then some nuts, in which bring a little on top of it. And right here we have some grasshoppers."
"So they are the fried grasshoppers?"
"Yep. It's a bit of a nutty taste. It's very good."
And although it's still a bit of a novelty here, a few miles east at the University of Wageningen, scientists are taking insects seriously. I asked Professor Marcel Dicke who's heading of the research why he believes we should be replacing cows with caterpillars.
"Because they are an excellent protein source. The production of insects requires much, much less land space and feeds than the production of the regular livestock.
