        20年前普通英国人不知辣椒为何物,而今天辣椒农场遍布北欧乡村。

If they knew a bit about cooking, they might have been aware that it was this spicy hot fruit of the genus capsicum that put the eye-watering kick in the vindaloo. But otherwise it seemed that chilli, like garlic, was not our sort of thing. But, boy, how things have changed!
Our damp, northern European countryside is now peppered with chilli farms. Small country towns in our likely counties host chilli festivals. And at least half a dozen growers of serious scale now supply the UK food industry. So what happened?
I'm not, I should make clear, some macho lover of ludicrously hot food. But such is my dedications to the Food Programme that I'll be learning how to taste raw chillies, imbibing lethally hot sauces under medical supervision and picking up tips on how to grow this versatile plant in our grey wet climate. But first I went to consult the oracle, food writer, restaurateur, lover of Mexican food and all things chilli, Thomasina Miers.
I'm generally obsessed with chillies of all types and fascinated by the different varieties across the world. And I've always cooked food from all countries.
So this is not just the Mexican traditional chilli. This is rather across the world.
Well, chillies originated in Mexico, over 200 varieties, amazing kind of wrap to our flavour and taste.对于20年前的英国人来说,辣椒就是调料架上干巴巴的红色粉末或是一大碗墨西哥细碎调料。他们要是多少懂点烹饪,肯定早就能知道辣椒才是咖喱肉里那股催泪冲劲儿的元凶。但是貌似和大蒜一样,辣椒一直不是我们的菜。可是,我了个去,这世界变化真快。
我们地处欧洲北部,气候潮湿。这里的乡下现在布满了辣椒农场。很多漂亮的小镇都会举办辣椒节。另外现在英国食品工业至少有半打大型辣椒供应商。这之前到底发生了什么(改变了辣椒的地位)?
我要先澄清一下,我并不是个玩命的变态辣爱好者。但是为了这个美食节目我豁出去了,我要试着品尝生辣椒和要了亲命的辣酱,当然这都是在医生监督下的。我还学到了几个在我们阴沉潮湿的气候下种植这种多用途植物的窍门。 不过首先,我得先去咨询一下权威人士——美食作家、餐馆老板、以及墨西哥菜和一切辣物的爱好者汤姆西娜·迈尔斯。
所有种类的辣椒都令我着迷。世界上有那么多种辣椒,个个都吸引我。我经常做不同国家的料理。
所以说这不是单纯的墨西哥传统辣椒,而且世界性的。
辣椒源自墨西哥,有200多种,对我们来说就是味觉盛宴呐。
